To achieve the crunchy or the chewy biscuit you will need to play with the cooking time and the temperature of the oven.
General rule – soft biscuits decrease the temperature and the baking time.
As for me it depends on my mood – as you can never go wrong with an Anzac biscuit in your sack.
Ingredients
- 1 cup of rolled oats
- 1 cup of plan flour (sifted)
- 1 cup of packed brown sugar
- 1/2 cup of desiccated coconut
- 125 g of butter
- 2 tbsp golden syrup or treacle
- 1 1/2 tbsp water
- 1/2 tsp bicarb of soda
Instructions

- Preheat oven to 160c
- Grease the baking trays and line with baking paper
- Combine dry ingredients
- Put butter, syrup and water in a small pot and stir over a low heat until it mixes together and is a smooth consistency
- Stir in the bicarb of soda
- Mix it all into the dry ingredients
- Roll into balls of the same sizes, place on tray and slightly flatten the balls
- Place roughly 5 cm apart as they will spread as they bake
- 20 minutes or until golden brown
- Cool and eat
