Camp Oven Cooking

This is an original Out&About with Dayv recipe, to be enjoyed around the camping fire with a naughty red wine or a filthy rum or even a whiskey. …or perhaps each one in random order – but drink responsibly.

Ingredients

  • Boned lamb roast
  • Onions
  • Can or two of vegetable soup
  • Any fresh chopped veggies you choose
  • Rice is optional at the end

Instructions

    • Take a boned lamb roast and place in a thermal cooker saucepan/ or camp oven over hot camping coals.
    • Brown it on all sides to seal.
    • Stir in some onions and lightly cook until clear.
    • Add a can or two of vegetable soup and any fresh chopped veggies you choose and bring to the boil.
    • Simmer for about 15mins and place lid on or put in a thermal cooking bag.
    • Let it sit for about 4 hours to stew away quietly, however, ensure the coals are hot enough to keep the camping oven at a simmer.
    • *Option – You can mix in some rice and bring to boil again in the final stages.
