This is an original Out&About with Dayv recipe, to be enjoyed around the camping fire with a naughty red wine or a filthy rum or even a whiskey. …or perhaps each one in random order – but drink responsibly.
Ingredients
- Boned lamb roast
- Onions
- Can or two of vegetable soup
- Any fresh chopped veggies you choose
- Rice is optional at the end
Instructions

- Take a boned lamb roast and place in a thermal cooker saucepan/ or camp oven over hot camping coals.
- Brown it on all sides to seal.
- Stir in some onions and lightly cook until clear.
- Add a can or two of vegetable soup and any fresh chopped veggies you choose and bring to the boil.
- Simmer for about 15mins and place lid on or put in a thermal cooking bag.
- Let it sit for about 4 hours to stew away quietly, however, ensure the coals are hot enough to keep the camping oven at a simmer.
- *Option – You can mix in some rice and bring to boil again in the final stages.
